[Unit Project 2] Cocoa Flavored Madeleines
Do you know Madeleine? Madeleine is originated from France, it is a baked confectionery shaped like a seashell. It is said that when Madeleine, a servant, baked sweets using scallop shells. Therefor, this sweets was named "Madeleine”.
Last Valentine's Day, I wanted to make some sweets for my family. But, at that time, I had only a few time because of I working part-time job hard. However, I found a recipe of Madeleine that can make easily in a short time. I came up with the idea of adding cocoa powder to this recipe because there was some cocoa powder that was close to its expiration date. I would like to introduce this recipe for beginner to cook because it is easy to make and you can buy the Madeleine mold at Daiso where most things are sold for 100yen.
You will need:
- Microwave
- Oven
- Refrigerator
- Large bowl that can hold 50g flour and 50g sugar
- Small heatproof bowl that can hold 50g melted butter
- Whisk
- Sieve
- Kitchen spoon
- Madeleine mold
- Cooking rack
- Oven mitt
- teaspoon
- Kitchen paper
Ingredients
This recipe makes 9 madeleines.
- 1 Egg
- 50g flour
- 1 kitchen spoon cocoa powder
- Half teaspoon baking powder
- 50g sugar
- 50g unsalted butter
- A little Butter for applying to the mold
1. First, add sugar and the raw egg in the large bowl and mix them by rubbing using the whisk.
2. After add the flour, the baking powder and the cocoa powder in the large bowl using sieve, mix using the whisk in a cutting action.
3. Second, after put the butter in the small heatproof bowl, melt it in the microwave for about 1 minute and add it in the large bowl, mix gently.
4. Then, put the bowl with the dough to cool in the refrigerator for about 1 hour.
5. After apply a thin layer of butter to the mold using kitchen paper, take the bowl out of the refrigerator, then, scoop the dough using kitchen spoon and pour up it to 70% of the each mold.
6. Then, lift up the mold about 2cm and drop it without changing direction to let the air out in the dough.
7. After the oven has heated up to 170℃, put the mold with the dough and bake in the oven for 15 minutes until surface turns golden brown.
8. Finally, after removing the mold from the oven using oven mitt, remove madeleines from mold immediately, and place it on a cooling rack.
9. Your madeleines are ready to serve.

I introduced the cocoa taste madeleine here, but you can change it to Maccha flavor by adding 1 tea spoon of Maccha powder instead of cocoa powder. Also, you can make madeleine cute by decorating surface of madeleine with chocolate. I made madeleines as a Valentine's Day sweets, however, you can also make them for birthdays or Christmas depending on how you decorate them. Please try making Madeleines!
